• 8 oz. parboiled chow mein (egg noodles)

  • 1 big egg, scrambled

  • 2 oz. pork tenderloin

  • 1-2 oz. onion

  • 1 tsp red chili (optional)

  • Sauce mixture:

  • 1 tbsp Asian light soy sauce

  • 1/2 tsp dark soy sauce, optional

  • 1/4 tsp salt

  • 1 tsp sugar

  • 1 tbsp green onions, chopped

  • Other:

  • Peanut/canola oil for frying

    Measure out main ingredients we will need to make this Chinese chow mein recipe.

    Parboil noodles in a pot until tender, not over-soft, remove and mix with sesame oil.

    Heat a wok to hot with oil, add meat, fry until cooked, and add onion and fried egg.

    Stir until onion is soft, mix in red chili and sauce mixture. Add chow mein noodles, whisk completely before serving.


Parboil noodles in boiling water for about 1-2 minutes if use soft egg noodles, 5-6 minutes if use packaged (the dried) egg noodles. In a word, don't over cooked.
